How we cook
Slow food, fire and family
A trattoria spirit on the Mornington Peninsula
Volpino was born from a simple idea: that the best meals are the ones that take time. We fire our oven with red gum timber, letting it reach 400°C before the first pizza goes in. We stretch our dough by hand, roll our pasta in the morning, and source ingredients from producers we know and trust.
Our name means “little fox” in Italian — a nod to the clever, curious spirit we bring to everything we do. You'll find the foxes on our logo, on the walls, and hopefully in the character of every dish that leaves our kitchen.
Since opening in 2014, Volpino has become part of the fabric of Mount Martha. We're a place for weeknight dinners, long Sunday lunches, special occasions and the kind of conversations that stretch well past the last plate.

The kitchen
How we do it
Wood Fired
Our oven runs on red gum timber. We heat it for two hours before service, cooking pizza at 400°C for a crust that's charred, chewy and unlike anything from a conventional oven.
House Made
Pasta is rolled fresh every morning. Our ragù braises overnight. Gelato is churned in-house. If we can make it ourselves, we do.
Natural Wine
Our wine list champions small producers — mostly Italian, with Australian standouts from the Peninsula. Low intervention, high character.
